The best way to cook couscous
For two servings of the small-grain plain couscous specified here, bring 1 cup water to a boil with 2 teaspoons olive oil. Stir in ¾ cup couscous, cover, remove from heat, and rest 5 minutes before fluffing.

On this page
Couscous is pasta, and the small quick-cooking granules behave differently from round pearl couscous. This batch follows Near East Original Plain directions. Ratios vary between products: use your package when it differs. Finish with a fork so the hydrated granules separate without being compressed.

Before you start
- Couscous contains wheat; it is unsuitable for wheat allergy or celiac disease.
- Open the lid away from your face to release steam.
- Refrigerate cooked couscous promptly in shallow portions rather than cooling a full pot on the counter.
Covered rest method
Verify the pasta type
Check for small-grain couscous with a short covered-rest method. Measure it before heating.
Look for Tiny granules, not pearl-shaped pasta.
Boil the liquid
Bring water, oil, and optional salt just to a boil. Keep the lid ready.
Look for Bubbles across the surface.
Cover off the heat
Stir in couscous once, cover, and remove from the burner. Leave for 5 minutes.
Look for Liquid absorbed without constant stirring.
5:00 suggested timingSeparate and serve
Lift the lid away from you. Rake gently with a fork from edge to center. Taste a cooled bite before adding dressing.
Look for Separate granules without dry centers.
Fix common problems
Boiling small-grain instant couscous continuously as though it were spaghetti.
Still dry? Check the package ratio and add a small splash of hot water, cover, and reassess.
Wet clumps? Fluff gently and let excess steam escape; vigorous mashing makes separation harder.
Common questions about this method
Is pearl couscous the same?
No. The larger pasta needs a different cook and different quantities. Follow its package instead of this five-minute off-heat method.
Can I use broth instead of water?
The manufacturer lists broth as an option. Keep the measured liquid quantity and reduce added salt if the broth is seasoned.

Microwave restAbout 10 min
In a 2-quart microwave-safe casserole, heat 1 cup water with optional salt until boiling. Carefully stir in ¾ cup small-grain plain couscous and 2 teaspoons oil, then cover and rest outside the microwave for 5 minutes. Fluff when the liquid is absorbed; pearl couscous needs different instructions.
