Before you choose

Package time is a starting point because pasta shape, brand, and boiling intensity differ. Tasting catches the correct texture, while a small amount of starchy water helps sauce cling.

Sauce-finished pasta method

  1. Boil and salt

Bring a stable pot of water to a full boil and salt it before adding pasta.

Look for Water returns to an active boil after pasta is added.

Use care around steam and boiling water.

  2. Stir early

Stir immediately and several more times during the first 2 minutes.

Look for Pieces move separately rather than clumping.

    2:00 suggested timing
  3. Taste

Begin tasting 1–2 minutes before the shortest package time.

Look for Center is firm but no longer chalky.

  4. Reserve water

Scoop out about ½ cup of cooking water for this two-serving batch before draining. Do not rinse pasta intended for hot sauce.

Look for Reserved water is cloudy with starch.

Lift and drain away from your body.

  5. Finish in sauce

Toss in warm sauce for 1–2 minutes, adding reserved water a little at a time.

Look for Sauce glossily coats the pasta without pooling.

Fix common problems

Most common mistake

Cooking strictly by the printed time and rinsing afterward. Taste is the better finish test, and rinsing removes useful surface starch from hot pasta.

Recovery 1

Sauce too tight? Add reserved water a spoonful at a time.

Recovery 2

Pasta too firm after draining? Finish longer in the sauce.

Common questions about this method

Should I rinse hot pasta?

Usually no when you are serving it with a hot sauce. Reserve some cooking water and finish the pasta in the sauce. Cold salad preparation is a different case; drain well and chill promptly.

How much cooking water should I save?

For this two-serving batch, reserve about ½ cup before draining. Add it to the sauce a spoonful at a time until the sauce coats the pasta; you do not need to use all of it.

  • Sauce or pasta-salad dressing of your choice

Equipment

  • 4-quart or larger pot
  • Colander
  • Tongs or spoon
  • Heat-safe cup for pasta water

This starting quantity suits most wheat pasta. Follow the package for fresh, filled, gluten-free, or unusually large shapes.

  1. Boil

Salt boiling water and add the pasta, stirring during the first 2 minutes.

    Look for Pasta circulates freely.

    Use care around boiling water.

    2:00 suggested timing
  2. Cook tender

Cook slightly beyond firm al dente so chilled pasta is not hard.

Look for Center is fully tender but the shape remains intact.

  3. Drain and cool

Drain thoroughly and follow the salad recipe's cooling and dressing method.

Look for Excess water no longer dilutes the dressing.

Cool promptly rather than leaving warm pasta out.

Refrigerate the finished salad in a shallow covered container.

Look for Salad is cold before serving.

    Refrigerate within 2 hours.
