The best way to freeze cooked rice
Divide freshly cooked rice into shallow small portions and cool it quickly, using an ice-water bath around the containers if needed. Aim to get it into the freezer within 1 hour of cooking. Reheat a portion once to 165°F throughout.

Shallow containers method
Portion immediately
Use clean utensils to split rice into shallow meal-sized portions. Do not leave the batch in the cooking pot to cool.

Cool rapidly
Set suitable containers in an ice-water bath without allowing water inside. Stir rice with a clean spoon and replenish ice as needed.

Close, label, and freeze
Once cooled, close the containers, label the cooking/freezing date, and freeze promptly at 0°F or below. Aim to complete cooling and freezing placement within 1 hour.

Reheat one portion
Reheat directly from frozen in a covered vented microwave-safe dish with a little water, stirring and checking several spots to 165°F. Eat promptly; do not reheat again.

Does reheating kill every rice hazard?
