The best way to roast asparagus

Toss 1 pound trimmed asparagus with 1 teaspoon oil and light seasoning. Roast in one layer at 400°F for about 12–15 minutes, checking thin spears early and stopping when the stems are tender.

  1. Rinse and trim

    Rinse, dry, and trim the tough ends. Separate unusually thin or thick spears.

Should I snap or cut the ends?

Either can remove tough ends. With a knife, inspect the cut and trim woody material without discarding more of the tender spear than necessary.

Can I skip oil?

The microwave method uses water for steaming. For roasted asparagus, the light oil coating helps the surface cook evenly; the finished texture will differ without it.
