The best way to roast carrots
Cut 1½ pounds carrots into even sticks, coat with 1 tablespoon oil and light seasoning, and roast in one layer at 400°F for about 20–30 minutes. Turn once and finish when a fork enters the thickest pieces easily.

On this page
A tray containing thin tips and thick chunks cannot finish evenly. Split the thick ends lengthwise so pieces share a similar thickness. Decide whether you want browned edges or simply tender carrots: the oven does the first, while a covered microwave dish can handle a small side without using the oven.

Roasted sticks method
Trim evenly
Scrub, trim, and peel if desired. Cut into sticks around ½ inch thick, splitting broad ends.
Look for Pieces with comparable thickness.
Heat and coat
Preheat to 400°F. Toss carrots with oil and seasoning until lightly coated.
Look for A slight sheen, not excess oil.
Spread and roast
Arrange in one layer with room between pieces. Roast 20–30 minutes, turning halfway.
Look for Edges gain color while centers soften.
Check the thickest
Test the widest piece with a fork. Remove finished thin pieces first if necessary.
Look for A tender center with a little browning.
Fix common problems
Cutting only by length and leaving thick carrot ends much wider than the tips.
Dark outside but hard inside? Reduce heat and use thinner pieces next time.
Pale and wet? Spread over more pan area; crowded pieces steam.
Common questions about this method
Do I have to peel carrots?
Peeling is optional for sound carrots that are scrubbed clean. Remove damaged parts and trim the ends.
